Oven baked onions, Taleggio sauce Recipe

Bring a large, deep pan of water to the boil. Set the oven at 200C/gas mark 6. Peel 4 medium sized onions , keeping them whole. Add 2 bay leaves and 6 black  peppercorns to the boiling water, then lower in the peeled onions. Leave them at a brisk simmer for about 30 minutes, until they are soft and yielding. Lift out the softened onions with a draining spoon and place them in a baking dish. Pour a little olive oil over the onions, add 30g butter, the leaves from 4 thyme sprigs and a little black pepper, then bake for about 40 minutes, basting once or twice as they cook. Warm 125ml double cream in a small saucepan over a low heat. Cut 100g Taleggio  cheese into small pieces, then leave to melt, without stirring, in the cream, adding 2 sprigs of thyme . Vegetable fritters, rucola mayo Recipe

Grate 200g carrots , 200g parsnips and 200g courgette . Finely slice 100g leek . Mix 1,5 tsp coarse salt with the veggies and put them in a colander to drain during 30 mins. Then press out as much water from the mix, put in a bowl and mix with 1,5 tsp dried oregano , 1,5 tsp ground cumin , 1 tsp paprika powder , 1 tsp black  pepper , 1/2 tsp cayenne pepper , 3 finely hacked cloves of garlic, the zest of 2 limes , 3 tbsp almond flour , 3 eggs and salt. Then use a stick blender to puree 100g  sugar free mayo , 100g creme fraiche , 1 clove of garlic , 1 seedless green chili, 30g rucola (or watercress), the juice of 1/2 lime , salt and pepper. Pan fry small (ca 7 cm) burgers from the veggie 'batter' in oil, 3 mins per side. Avocado fries Recipe

Mix 1 finely sliced r ed onion with 180g tomato frito , 2 tbsp hacked coriander leaves, 1 tsp ground cumin , the juice of 1/2 lime , salt, pepper and some Tabasco Beat 2 eggs. Mix 74g almond flour  with 75 grated Parmesan and some black pepper. Halve 2 avocados. Remove the stones and take out the flesh with a spoon. Then slice each half lengthwise in 3 parts Pour a thumb of archaise oil in a wok and heat the oil to 180°C Drag the avocado parts through the beaten egg, then through the almond and cheese mix before frying nice and crispy for 3 mins Dry on kitchen paper. Checkered Cookies- A Christmas Treat!!!! Recipe

M y friends came over for a Christmas party and we had a potluck lunch, then we made ugly sweaters together and did white elephant by stealing and keeping the gifts. It was so much fun with them. While they were leaving I wanted to give them some christmasy gifts and cookies, so I wrapped snow globes and I was googling for cookies. I wanted to make some cookies which I never posted in my blog and so I made these checkered cookies which is very different from the normal cookies and which will be liked by all because of the cakey texture of the cookies. I got the recipe from here and I double the ingredients as I have to make a big batch to give to my friends and save some for my kids. These cookies look tedious to make but it can be done within no time if you make these with your friends or family. My kids were helping me in making these and it was so much fun. Red wine-poached monkfish with corn, mushrooms and black garlic Recipe

Slice 1 onion , 2 garlic cloves and place them with 5g thyme in a saucepan and cover with 375ml red wine and 250ml port . Place over a medium heat and reduce to a syrup – this will take several hours Add 1/2 l chicken stock and reduce until thick and glossy, then strain into a clean saucepan and set aside Peel 1/2 head of black garlic and place the cloves into a small saucepan and add enough water until they’re only just submerged. Bring to the boil and cook for 10 minutes, or until the cloves are very soft. Transfer the mixture to a food processor or blender and blitz until smooth, then stir in 5ml sherry vinegar and 5ml soy sauce . Transfer to a squeezy bottle and reserve in the fridge until needed Boil 1/2 cob of sweetcorn in salted water for 10 minutes, then drain. Tuna tartare, horseradish cream Recipe

Slice 150g very fresh  tuna in small cubes. Hack 1/2 spring onion and 5 physalis berries finely. Mix everything with 1 tbsp soy sauce , 1 tbsp olive oi l, 1/2 tsp yuzu juice and black pepper. Mix 75ml whipped cream with 1 tbsp grated horseradish . Sprinkle 3 pieces of  Melba toast  with olive oil, salt and pepper and bake in a 150°C oven during 5 mins Then crush them. Use a serving ring to plate. Crushed toast at the bottom, followed by  the tartare, then the cream and finish with 1/2 physalis. Air-Fryer Crispy Potatoes- A simple & elegant side dish with rice!!! Recipe

M y friend (Subha), who is a great cook always makes these fried potatoes but not in air-fryer. She used to  saute the cubed potatoes in little oil till they turn golden and crispier. Ones, when I went to her house, I had it which reminded me of my mom's potatoes, who makes exactly like these. But whenever I tried making them at home, they would never turn out perfect. Either I had to add lots of oil as potatoes absorb oil or they got burnt. I used to think, the dish which doesn't take much time to make has become complicated for me. Then one day I tried making them in air-fryer which doesn't require much oil and ta-da, they turned out perfect. I started making them frequently as my family loves the dish. Air-fryer does some kind of magic on potatoes. Crispy out side and perfectly soft inside. These are the most addicting side dish. Salmon tartare Recipe

Slice 200g very fresh salmon into small cubes Mix with 1 tbsp very finely cut red onion , 1/2 tbsp finely sliced ginger , 1 tbsp soy sauce , 1/2 tsp sesame oil , 1/4 tsp wasabi , salt, pepper and some lime juice . Asparagus, miso butter, furikake Recipe

Pre heat the oven at 200°C Mix 20g miso , 40g butter (room temperature) and 1/2 tbsp grated ginger , season with black pepper. Sprinkle some olive oil and sea salt on 6 green asparagus and bake them in the oven for 10 mins. Shake after 5 mins. leftover Turkey Potato Cutlets Recipe

O ur friends came over for Thanksgiving and together we cooked a thanksgiving dinner by baking the turkey, gravy, mashed potatoes and Apple pie. The turkey was huge, mostly we finished within 3- 4 days but the remaining I kept it frozen as I was thinking of making something later. Then as the kids take lunch for school, one day I decided to finish the turkey by making cutlets which I usually make with chicken. Ones it's done, the cutlets came out delicious with the right amount of spices and the potatoes. We can add any spice powders from the pantry. These can also be used as patties for burgers or can be stuffed into wraps. In which ever way, these cutlets taste delicious and will be liked by all. Try this recipe and let me know. Crispy veal sweetbread, mustard sauce Recipe

Overnight soak 250g sweetbreads in cold water, refreshing the water from time to time, till all the blood is gone, then trim away any membrane or unappetising looking tubes from the outside Place the sweetbreads in a pot with a dash of vinegar, a chopped shallot and some pepper. Cover with water, then top with a circle of greaseproof paper and bring to the boil. Simmer gently for 3 minutes, then remove from the heat and leave to cool. R emove the sweetbreads from the pan and cut them into thick, even slices and season with salt and pepper Meanwhile, make the mustard dressing. Whisking together 1tbsp Dijon mustard , an egg yolk and 1tsp white wine vinegar and gradually whisk in 100ml sunflower oil and 100 ml olive oil until emulsified In a small saucepan heat 100 ml water with 1 tbsp chopped shallot , 1 tbsp capers and 1 tbsp chopped parsley until it reaches boiling point. Teriyaki salmon with wakame salad. Recipe

Pre-heat the oven at 180°C Soak 5g dried wakame during 10 mins in cold water. Halve a cucumber lengthwise, take out the seeds and slice the rest thinly. Mix with a pinch of sea salt salt and leave 10-15 mins in a colander to drain. Bring 25 ml sake , 25 ml Mirin  and 50 ml soy sauce to the boil. Softly boil for 2 mins and take from the fire, add 1/4 tsp Xanthan gum and use a stick blender to make a thick Teriyaki marinade Put 2 salmon filets (ca 150g each) in an oven dish and cover with half the marinade. Put in the hot oven for 12 mins, take out twice to brush with more marinade. In the meantime make the salad dressing ; grate a clove of garlic and mix with a tsp grated ginger, 1 tbsp rice vinegar , 1 tbsp soy sauce, 1 tbsp Mirin , 1/2 tsp sesame oil and a few drops of Tabasco   Squeeze as much water from the wakame as possible and tear in small pieces. Lazy day? Crush and crumble 12 walnuts , then toast them. Bring 80ml cream to the boil and crumble 100g blue cheese in it. First add the hot nuts to the sauce, then 300g courgetti.
