Best hummus ever, Ajo Blanco and Spicy Aubergines

  Best hummus ever   Ajo Blanco, cold soup from almonds and garlic Aubergine, Japanese style     Cucumber Raita   As we didnot change anything (it tasted so delicious), here are Simon Hopkinson's recipes. Cranberry Loaf Cake

W hen I bought some packets of dried cranberries, I only had one thing in my mind that I have to make a loaf cake which I saw in Veg bowl blog long ago. After I reached home at the first opportunity, started making this loaf cake which turned out yumm.. Please ignore the crack on the cake..:) I have used the exact ingredients as I want the same flavor and texture as in the blog. My kid who only eats either one or two slices of cake, ate this cake more than 5 pieces one after the other... :) The cranberries are coated in the flour before adding this in the cake batter so that it is evenly distributed in the cake or else it will settle down in the bottom. Ingredients: Dried Cranberries- handful Flour- 1 ½ Cup Sugar- 1 Cup Yogurt- 1 Cup Butter- ½ Cup Vanilla Essence- 1 tsp Baking Powder- 1 tsp Baking Soda- ¼ tsp Method: Preheat the oven to 180 degrees C. Mix the yogurt and sugar till becomes smooth and creamy. In this add the baking powder and baking soda and let it rest for 5 minutes.

Kaju Pakoda / Cashewnut Fritters

A fter a nice and refreshing evening walk when we were back home, the entire house was filled with the warming smell of hot pakodas. The scintillating smell of the fresh pakodas dragged us to the kitchen where my SIL was preparing this snack along with tea. Quickly I grabbed one and as I ate I was surprised by the taste as it was not the regular pakoda and it was made of cashews. I never knew that we can make pakodas using cashew nuts.The crispy inside and the crunchy outside snack will be a hit in parties or get togethers. Kids will love this as it is very rich in taste and it healthy too. Ingredients: Cashew nuts- 1 Cup Besan- ½ cup Red chilli powder- 1 tbsp Salt- as per taste Water- as required Oil- to fry Method: Mix the besan, chilli powder, salt and cashew nuts in a bowl. Sprinkle water little by little in the above bowl till it forms a soft dough. Heat a kadai with enough oil to fry. Slowly drop the dough in small batches and deep fry these till it turns golden and crispy. Serve
