Image
A no-bake energy bites which are a perfect snack post workout. I found these energy bites recipe from Deliciously Ella's  blog which has many healthy and unique recipes. I love her blog because they are so simple, easy and there are many different varieties of healthy dishes. In these bites, I have added oats, which was not in the main recipe. These energy bites are super versatile. You can add your own choice of chocolate chips, peanut butter, desiccated coconut, dried cranberries and so on. When I saw the recipe, I tried and made around 10- 12 bites, but after seeing the demand for these bites from my husband and daughter the next day I made a big batch. By this time I emptied a big pack of dates. I liked the addition of coconut oil. My friend always makes different varieties of energy bites. I have tasted them before but never tried making them at home. But when I saw these cuties in Ella's blog, all the ingredients were handy and so here it is on my blog. These e...

Pani Puri with Homemade Puris

Image
P ani Puri is one of my favorite chaats from childhood. Whenever we go out, we used to thoroughly enjoy the chaat from the roadside street vendors. In every nook and corner, you can see a pani puri stall. We used to have competition, as who will have more puris. Every Indian like pani puri to the core. It is said that this not only satisfies your taste buds but also keeps the kid in you alive. Once during fasting time, in Bangalore, after breaking the fast I had 30- 35 pani puris without eating anything. I like to have them anytime of the day. After coming to the US it has become very rare to find pani puri. We will get the pani puri kit in all the Indian stores. I started making it from scratch as we don’t find the puris most of the time in stores. My daughter loves it a lot. She won’t eat anything else if pani puri is there for snacks. Pani puris have different names like the puchkas, gol gappas and so on. Pani means water and puri are the fried puffed dough balls. Yesterday was my s...

Healthy Banana and Mixed Berries smoothie

Image
M y dear friend introduced me to this smoothie, who herself is a big smoothie lover. She would always tell about different varieties of smoothies which she makes at home for her family. One day when I was in her house, I asked for the recipe and generously she made a big batch of this smoothie and whatever she told about the smoothie is completely true. It is a very filling, healthy, appetizing, flavorful and simply mind blowing. While adding the frozen berries, banana and spinach the smoothie will be thick, just add enough amount of water or milk. There are lots of variations in making smoothies, like for kids we can add milk, for adults, who are health conscious can make this smoothie by adding water. Instead of regular milk, you can also add almond milk, by making the almond milk at home. I will share the recipe some other time. This makes more healthy by adding dates instead of sugar. If you want your smoothie sweeter, you can increase the number of dates. This is so filling that y...

Quick and Easy Kerala Christmas Fruit Cake/ Kerala Plum Cake

Image
I made it… I made it… Yayyy!!!!  At last, I made it. My all time favorite cake. I never thought that one day I would be baking a traditional Kerala Christmas plum cake, which is a long process of soaking the dry fruits in alcohol for a period of 6 months to a year, but today I am here with this recipe that doesn’t require to soak the dry fruits in advance and it’s an alcohol free cake so that you can try this instantly anytime. This cake tasted exactly like the cakes which we get in bakeries. I used to eat this a lot as a kid when we visited our native Kerala for vacations. Then whenever my D-I-L visited us, bought this cake. I loved this cake almost all the time I tasted. This fruit cake is rich and full of soaked raisins, cranberries, dates, cashews in apple juice which are well incorporated with the cake batter and sugar syrup and the amazing combination of spices which is then baked to a simple, perfect cake and by now your house will be filled with the aroma of the spice-fill...
