Tomato Salsa

Mexican food is not complete without variety of Salsas. Tomato salsa is the most common one and there are many ways to make this simple yet flavorful dish. I too have tried different versions in the past, but have settled for this recipe now. Blending the ingredient coarsely in a food processor make all the difference. You can also use your hand blender if you don't have a food processor. Here is the recipe. All you need is Tomato - 1 cup ( chopped ) Onion - 1\2 cup ( chopped ) Coriander - 2 tbsp ( chopped ) Garlic - 2 cloves ( chopped ) Jalapeno peppers - 1 ( chopped ) Olive oil - 1 tsp Salt to taste Black pepper - 1\4 tsp Lemon juice - 2 tbsp Method of preparation Mix tomato, onion, coriander, garlic and jalapeno peppers in the bowl of your food processor. Use the chopping blade and blend till the mixture is coarsely chopped. Add olive oil, salt, black pepper and lemon juice. Mix well. Chill for an hour before serving.

Home made Sour Cream

Sour cream is made by fermenting regular cream with some bacteria. Due to the bacterial culture, the cream becomes thick and sour. I always missed Sour cream when ever I made Mexican dishes and this is what prompted to make my own at home. It's very easy to make at home and with just 3 ingredients, you can get amazing sour cream at home. Here is the simple recipe. All you need is Heavy cream - 1 cup ( room temperature ) Full cream milk - 1\4 cup lemon juice - 1 tsp Method of preparation Transfer the heavy cream in a clean glass jar. Add lemon juice in milk and keep aside for 5 minutes. Add the mixture in the jar with the cream Mix well. Cover the jar and keep aside for 24 hours at room temperature. Refrigerate the jar for 6-8 hours. Your sour cream is ready to be used. It can be refrigerated for up to 3-4 days.

Strawberry Vanilla Jam

On my last visit to a supermarket, I got obsessed with these bright and fresh strawberries and picked a few boxes. We munched on them throughout the day, but I still had a few box left which needed to be finished quickly. After the huge success of strawberry butter that I made last time, it was time to give strawberry jam a try. A vanilla bean was all that was needed to take this jam to a different high. Here is the simple recipe of this wonderful jam. All you need is Strawberries - 2 cup ( chopped ) Sugar - 1 cup Vanilla bean - 1 ( If vanilla bean is not available, you can use a tsp of vanilla extract ) lemon juice - 2 tbsp Method of preparation Add the chopped strawberries, sugar and lemon juice in a pan. Kadhi is a popular Indian dish made with chickpea flour and sour yogurt. There are many variations of this delicious dish and today I have made kadhi with lots of vegetables, making it even more healthy and delicious. Here is the recipe. Spiced Green Peas ( Chuki Matar )

Market is flooded with fresh green vegetables these days and I too got tempted and bought a few kilos of fresh green peas and made this delicious chuki mater for evening snacks.This is one of my favorite winter snacks and it is very easy to make too. I add lots of ginger to the recipe which gives a wonderful taste. Here is the recipe. All you need is Ghee  - 1 tbsp Cumin seeds - 1 tsp Ginger - 2 inch piece ( very finely chopped ) Green chili - 1 ( finely chopped ) Salt to taste Sugar - 1 tsp Lemon juice - 1 tsp Fresh green peas - 3 cups ( You can use frozen peas if fresh is not available ) Chaat masala - 1\2 tsp Method of preparation Heat ghee in a pressure pan. When the ghee is hot, add cumin seeds. When the seeds starts to splatter, add ginger and green chili. Cook for 20-30 seconds. Add green peas, sugar and salt. Add 1 tbsp water and pressure cook till one whistle on high heat. Open the pressure pan. Add chaat masala and lemon juice and cook covered for 3-4 minutes without pressure

Strawberry Butter

Strawberries are flooding the market and I always get tempted to buy a few boxes on my grocery store visits. This time I incorporated a few strawberries in my butter and got an awesome spread for my morning toast. This recipe is very easy to make yet very delicious. Here it is. All you need is Unsalted butter - 250 g ( softened ) Powdered sugar - 1\2 cup Strawberries - 1 cup ( Chopped and slightly crushed ) Method of preparation Whisk the butter till light and fluffy. Add the powdered sugar and crushed strawberries. Mix well. Your strawberry butter is ready. Apply on bread slices or toast.

Rajasthani Baati

Baati is a traditional Rajasthani dish and is served with panchmel dal. It is a very rich dish as the bati's are dipped in ghee before serving. Here is the simple recipe. All you need is Whole wheat flour - 3 cup Salt - 1 tsp Ajwain \ Carom seeds - 1 and 1\2 tsp Refined oil - 1 cup Ghee for soaking Method of preparation Mix whole wheat flour, salt, carom seeds and oil in a pan. Knead a tight dough using lukewarm water. Keep aside, covered for 30 minutes. Divide the dough into 12 equal parts. Roll each part into a rough ball. Make an indentation in the center of each ball with your thumb. Pre heat the oven to 200 degree C. Set the oven on toast mode. Bake the baati's for 20-25 minutes, till slightly browned. Remove from oven. Dip in ghee. Serve hot with panchmel dal , churme ke ladoo and garlic chutney .

Churme ke ladoo are traditionally made in Rajasthan. A dough is made with whole wheat flour and it is deep fried and then dry roasted. A lot of dry fruits and ghee is added and the mixture is shaped into ladoos. Some people eat churma as is and do not shape it into ladoos. These ladoos are also paired with Dal bati, a traditional Rajasthani meal. Here is the recipe to make these ladoos. All you need is Whole wheat flour - 1 and 1\2 cup Ghee - 3\4 cup ( lukewarm ) and for frying Powdered sugar - 1 and 1\2 cup Almonds - 15-20 ( chopped ) Cashew nuts - 15-20 ( chopped ) Coarse cardamom powder - 2 tsp Pistachios for garnishing Method of preparation Add 3 tbsp ghee in whole wheat flour and mix nicely with your fingers. Knead a tight dough using warm water. Keep covered for 10 minutes. Knead again for a minute and divide the dough into 6 pieces. Make balls of the dough and roll into 1 cm thick disc. Panchmel dal is a Rajasthani dal which is made by mixing 5 different variety of lentils. It tastes wonderful with rice and chapati. The famous bati of Rajasthan is also eaten with this dal. Here is the recipe. All you need is Arhar dal \ Yellow pigeon peas - 1\4 cup Hari moong dal \ Split green gram- 1\4 cup Kali urd dal \ Split black gram- 1\4 cup Chana dal \ Bengal gram- 1\4 cup Dhuli masoor dal \ Pink lentil- 1\4 cup Salt to taste Turmeric powder - 1\2 tsp Water - 6 cups Ghee - 1\2 cup Dry red chilies - 3-4 Onion - 1 cup ( chopped ) Garlic - 1 tbsp ( chopped ) Ginger - 1 and 1\2 tsp Green chilies - 2 ( chopped ) Fresh coriander - 2 tbsp ( chopped ) Method of preparation Mix all the dals ( lentils ) in a bowl. I originally hail from Rajasthan and so have a connect with the Rajasthani food and culture. Although we have never stayed in Rajasthan because of my parents job, we used to visit relatives every now and then.  During those visits, we came to know about a lot of Rajasthani dishes which are not very popular outside the state but are very delicious and made in most households. A lot of people are aware of Besan ke gatte, but there is a similar kind of curry made with besan called Ram chane which is not very popular but tastes amazing. The dough to make Ram chane is similar to that of gatte, but here the dough is broken into small balls which are deep fried and then simmered in a gravy. Homemade Cream Fraiche

Cream fraiche is a soured cream which has a slight tang,  nutty flavor and a rich and velvety texture. It's used in making variety of dishes like soups, pasta sauces and desserts. Although it's available in some gourmet food stores, but is very expensive. It's very very easy to make at home with just two ingredients and the result is awesome. Here is the simple recipe. All you need is Fresh cream - 500 ml Cultured buttermilk or cultured yogurt - 3 tsp Method of preparation Heat the fresh cream on medium heat till lukewarm. Stir in the buttermilk or yogurt. Transfer the mixture in a glass jar. Cover the jar with a kitchen towel and secure the towel with a rubber band. Keep the jar undisturbed in a warm place for 12-15 hours. Your home made cream fraiche is ready. Remove the kitchen towel and put the lid on the jar. Store the jar in refrigerator for up to a week.
