Italian steak tartare Recipe

Cut the heart of an artichoke in thin slices and keep in ice water and some lemon juice to keep from browning. Melt a knob of butter, add a splash of olive oil. Add 4 tbsp Panko and 2 tbsp grated Parmesan . Brown and keep on kitchen paper. Then put 4 egg yolks and 2 anchovies in a mixing cup, add 150 ml sunflower oil and use a mixer to make a nice thick mayonaise. Season with lemon juice , pepper and salt. Slice 100g mushrooms, mix with the artichoke and a couple of tbsp mayo. Slice 200 g steak , add peper, salt and olive oil. Corned beef, herb cheese, scallop Recipe

Mix 2 tbsp fresh cheese with dill , basil , chives and some finely sliced garlic. Toast a slice of pumpernickel sourdough bread . Use a serving ring to cut nice circles from the bread and from corned beef. Very Seventies tartare of salmon on peach. Recipe

Cut 80 g salmon in small cubes, mix with 1 tsp finely sliced shallot and a little bit of  a red chili pepper. Then make a dressing from the juice and zest of 1/2 lime , 1 tbsp soy sauce , 1 tbsp olive oil , 1 tbsp whole grain mustard , 1 tsp grated ginger and some hacked coriander leaves  Just before serving  mix the salmon with the dressing. Spicey monkfish cheeks Recipe

I was lucky and had some leftover sauce in the freezer. To make it from scratch slice 1   onion   and 2 cloves of   garlic  finely. Stir fry  the onion, garlic and 1 tsp  sambal oelek. Add 1 tbsp  tomato puree  and fry for another minute. Add 1 tsp  ginger powder , 1 tsp  curcuma,  2 tsp  curry madras  powder, keep stirring to avoid burning. After another minute add 3 tbsp  mango chutney  and  200 ml cream, simmer another 2 mins. Oven dried tomato bites Recipe

The halved  tomatoes   need to be in the oven for 4 hours at 100°C, so start early! First sprinkle them with  salt ,  pepper ,  sugar ,  olive oil  and  lemon juice. Serve with fried  prawns  or leftover  mussels  on  wakamé . Fish & veg tempura Recipe

Difficult part: finding Japanese tempura flour.  Follow instructions on the pack, but use ice-cold sparkling water. And lumpy is good! Cut   beetroot, celery stick, paprika   into bite sizes. Buy celery with leaves , as they are the best part!   Soooo nice and crispy!  I added   prawns  and   sea bass. Sea bass, yellow cherry tomatoes, wakamé Recipe

Dip 120 g yellow cherry tomatoes in boiling water for 10 secs, cool under cold water and take of the skins. Slice in 4 parts. Hack 60 g wakamé  finely, mix with the tomatoes and keep cool in the fridge. Slice 1/2 filet of sea bass into small cubes, mix with 3 tbsp olive oil  and 2 tbsp chives and season with salt and pepper. Spoon the tomatoes in a glass,. Mint Chocolate Chip Pancakes Recipe

T his is a great recipe for all those who like mint chocolate chip pancakes. We usually make the regular pancakes as my kids are big time pancake lovers. I just tried these as my son likes the mint chocolate chip ice cream. There is nothing delightful as towering a stack of fluffy pancakes. The green food coloring and adding the ground mint leaves are optional as you can add the mint essence. Making pancakes from scratch is easier and doesn't take much time. As toppings you can have whipped cream or chocolate sauce or cut berries or maple syrup.  If you like pancakes, you must try this recipe....   Ingredients: Whole Wheat Flour- 1/2 Cup All Purpose Flour- 1/4 Cup Baking Soda- 1 tsp Egg- 1  Milk- 1/2 Cup Butter- 2 tbsp Sugar- 1 tbsp Salt- 1 pinch Vanilla Essence- 1 tsp Mint Leaves- 1 Cup Green Food Coloring- 1-2 drops Chocolate Chips- 1/2 Cup Method: Grind the mint leaves adding little water to a fine paste. Tempura from monkfish cheeks Recipe

Clean the monkfish cheeks , remove the membranes. Use the blender to mix  rucola , a clove of garlic and  mayonnaise to make a nice smooth green sauce. Prepare a tempura batter, following the instruction of the package. I used 100 ml tempura flour and 125 ml  ice-cold sparkling water. Feta-courgette frittata Recipe

Slice 1/2 red onion in very thin half moons. Soak in 3 tbsp white wine vinegar and 1 tsp sugar. In the meantime grate 1/2 courgette and use a clean tea towel to wring out as much water as possible.  Them mix the courgette with 50 g flour , 1 egg , 25 g sunflower seeds and the chopped other half of the r ed onion . Season with pepper and salt. Mix 1/2 tsp balsamico crème , 1 tbsp olive oil , 1/2 tbsp runny honey, 1/2 tsp ketjap manis and 1 tsp raspberry vinegar. Taste and season with pepper and salt. Lamb cutlets, miso, corn soufllé Recipe

Fill a baking tin with 3 cm hot water, put in the oven and heat at 185°C. Sweat a chopped shallot for about 3 mins in butter, the add 1 pressed clove of garlic and 125 g  (cooked, fresh or canned)   corn kernels . Stir and simmer for another 5 mins. Taste and season with salt & pepper. Liquidise in the blender. Whisk an  egg white  real stiff The whisk 50 ml cream , but it has to keep runny. Add 1 tsp cornflour to the corn mix, stir in the cream and finally fold in the beaten egg white. Fill 2 buttered soufflé molds and put them in the water in the oven (au bain marie) for 25 mins.  DO NOT OPEN THE OVEN IN THE MEANTI ME! I the meantime reduce 100 ml lambs fond with a sprig of rosemary till 1/3 is left. About 10 mins before  serving cover one side of 4 lamb cutlets with 1 tsp miso , first fry the other side for 2 mins in a hot pan, turn and fry for another minute. Courgetti, crispy tofu, peanut sauce Recipe

Start with the sauce: mix 3 tbsp peanut butter with the juice of 1/2 lime , 2 tbsp salt soy sauce , 1 tbsp ginger syrup , 1 tsp sriracha , 1 cm grated ginger and a bit of water . Then mix 250 g courgetti, 60 g grated carrot , 75 g bean sprouts and 7 g coriander.  Keep cool in the fridge. Cut 150 g tofu into 1x1 cm cubes. Put 2 tbsp cornflour in a deep dish and spoon the tofu through it, before frying the cubes in 2 tbsp sunflower oil till nicely browned and crispy on all sides, this will take about 10 mins. Just before serving stir half the peanut sauce trough the courgetti mix. Plate in a bowl and finish with the tofu, rings of spring onion, segments of lime and some more coriander leaves. Roasted watermelon, oregano vinaigrette Recipe

An hour in advance cut 1/2 watermelon in 3 cm slices, then use a serving ring to make 8 cm discs. Sprinkle some salt on them and drain on kitchen paper. Reserve the rest of the melon. Blanche 2 Roma tomatoes 20 secs in boiling water, cool under cold water and peel. Them quarter and separate the flesh, press the rest trough a sieve and mix in the blender the juices with some watermelon and the juice of 1/2 lemon .  Add some lemon zest, olive oil, salt, pepper and whisk into a dressing. Finally add a tbsp small oregano leaves. Then cut the tomato flesh into small cubes. By then the watermelon discs are drained. Fry them in 1 tbsp olive oil in a hot pan till lightly blackened. Cool in the fridge. Just before serving fry or grill ciabatta slices , rub with a garlic clove. Herring salad with golden beet Recipe

In a sense this could be a Thai recipe, combining salt (herring) with sweet (mayo, beetroot) and sour (gurkins, capers).  Basic ingredients are equal parts of  boiled potatoes  and yellow b eetroot , in 5x5 mm dices. The dressing is made from  mayonaise  and  horse radish.   Half a red onion , spoonful of  capers  and finely cut  gurkin  or cornichons. Spoonfull of  dill .  Mix and taste, leave in the fridge for at least a couple of hours. Taste again, now you can always add more of one of the ingredients.  I like the   raw, salted herring  on top, but others might mix the herring with the salad. Chocolate Lava Cake- Easy Peasy.... Recipe

A very easy, simple, delicious, fudgy and a gooey recipe with just 6 ingredients and baked in a very less time is what is required to celebrate any occasion. This chocolate lava cakes are enjoyed by every chocolate lover with the desired toppings. These chocolate lava cakes made in ramekins are perfect for single servings. A perfect chocolate lava cake is the one with gooey in the middle. I made these in ramekin bowls, you can also use muffin tray if you don't have ramekin bowls. This is made within 25 minutes. These cakes are easier than you think. These became famous because they are cakey on the outside with an irresistible center of dark warm chocolate flowing. Blacken a red paprika under the grill.   When ready, place in a bowl, cover with cling film and allow to cool.  Once cool, carefully remove the blackened skin from the pepper and cut the flesh into a medium dice.  Mix the pepper with 40 ml olive oil , 2 tbsp lemon juice , the zest of 1/2 lemon and 1/2 orange, 1/2 shallot finely diced, 1 small clove of garlic finely chopped, 1 tbsp chopped chives , 1 tbsp chopped parsley , freshly ground black pepper and sea salt   in a bowl Then marinate 2 filets of sardine in 1/2 tbsp soy sauce , 1/2 tbsp ponzu , 1/2 tsp yuzu and 1/2 tsp sesame oil for half an hour.
