Paneer Pop Corns

P aneer popcorn is a snack which can be enjoyed by everyone. A very healthy after-school snack for kids. This can make a perfect party appetizer which will be liked by all. This has a crunchy outside and a soft inside with which this becomes an excellent relish. These will remain crispy even after an hour of making this. This can be made ahead and refrigerated. When required, fry them in hot oil. The cubed paneer pieces are dipped in batter, rolled in herbed breadcrumbs and then deep fried. You can increase the spice levels according to your taste buds. For vegetarians, this is a tasty alternative to chicken popcorns. My daughter likes to eat it after her swimming class. A lip-smacking dish will be ready within no time and with very fewer ingredients. Hope you all will try this out and let me know. Baked Fish Sticks

A healthy and nutritious fish sticks would be a perfect tea time snacks or after-school snacks. As kids would be hungry by evening, these fish sticks would be a great option to make as it would take very less time. A crispy outside with a moist inside fish stick is what everybody will love to dig in. These would make a perfect party appetizer. My daughter will be very hungry after her swimming classes and every day I make sure she eats a healthy snack after an hour-long swimming. I find it very easy to make these fish sticks as this requires fish fillet which can be thawed very quickly. Once you try making them at home, you won't buy the prepackaged frozen sticks again. Strips of fish are covered in spiced bread crumbs and baked to perfection. You can have oven roasted veggies along with these fish sticks, which will make a perfect dinner. T he floods that dampened Onam, the harvest festival of Kerala, didn't dampen the spirit of the people in Kerala for reprising the sense of humanity in a time of grief. Back in Kerala, everyone is trying to get back on their feet after the worst floods hit Kerala. It is heard that as thousands of people are displaced in the floods, many are celebrating Onam in relief camps. This year Onam will be a low key affair. This year I have tried my hands on making these delicious gold coin chips which are made of raw Kerala Bananas. I think because of it's shape and color as a kid I used to call these gold coin chips. These chips are my all time favorite ones and would buy whenever I see them in the stores. But this time I wanted to make them at home and see how these turn out. A no-bake energy bites which are a perfect snack post workout. I found these energy bites recipe from Deliciously Ella's  blog which has many healthy and unique recipes. I love her blog because they are so simple, easy and there are many different varieties of healthy dishes. In these bites, I have added oats, which was not in the main recipe. These energy bites are super versatile.You can add your own choice of chocolate chips, peanut butter, desiccated coconut, dried cranberries and so on. When I saw the recipe, I tried and made around 10- 12 bites, but after seeing the demand for these bites from my husband and daughter the next day I made a big batch. T his granola recipe is so easy and a simple version, that you can make any time of the day. This is a perfect snack to munch on without thinking about calories. An ideal one to carry to work and to school. This will make an excellent healthy gift for someone special which is homemade and with lots of love and care. In this granola, we can add chocolate chips, dried berries, a variety of nuts or anything of your choice or eat it plain. it's tasty any of the ways. These are so addictive and delicious that I made 3 batches in the last week. I make this and store them in airtight jars, but we don't know when it gets over as they are so scrumptious and yummy that we simply munch on. Kids will love them for breakfast or as a healthy snack. Chicken Puffs

I n India, by evening the bakeries are filled with a different variety of hot puffs. Though I am not a big fan of these puffs, my family loves them a lot. Here in the US as we get them very rarely, I bake them once in a while for my puffs loving daughter and husband. Now as my in-laws are here, I make sure they eat fresh homemade snack along with their evening tea and puffs have become a common one. I usually bake egg puffs and paneer puffs . These chicken puffs, I made for the first time and is a huge hit. This is a perfect snack for guests. Make the chicken filling and fold it in the pastry sheet. Arrange them on a baking tray and when needed just bake and serve hot puffs. Enjoy them as it is, or douse them generously with ketchup and bite into this splendid treat. Baked Masala Peanuts

M asala peanuts is a perfect tea time snack which will be enjoyed by all in the family. Baked masala peanuts are one of our favorite snacks and so I will make sure to refill this by preparing a big batch before it gets finished. This is a guilt-free version of the fried masala peanuts and can be enjoyed an extra handful. The masala peanuts are coated with a thick batter of gram flour and seasoned with spices, which is then baked to perfection and enjoyed by all. Make sure to stir in between or else they will burn and will not taste good. The baked ones are crispy, crunchy and tasty just like the fried ones. By adding garlic, the flavor is well incorporated. This is so easy to make that you just have to throw all the ingredients in a mixing bowl and bake in the oven till done. This is a perfect guilt-free snack which can be enjoyed any time of the day. Lentils Stuffed Sweet Flatbreads/ Puran Poli/ Bobbatlu

T hese classic lentil stuffed flatbreads are popular Indian sweet which is made during festivals. They have different names in different parts of India, like the Puran Poli, bobbatlu, obbattu, holige, boli, poli and so on. In this, the stuffing is filled with jaggery and gram dal which is boiled and then blended well till it thickens. The outer layer is either a wheat dough or a plain flour dough or we can mix both the wheat flour and plain flour and make dough out of it. stuffed and rolled puran poli  This is liked by my kids which are also very healthy and nutritious. This will be a good after school snack. You can roll and freeze them. When required thaw and cook.
