Keema Kaleji \ Mutton Mince and Liver in a Spicy Curry

Keema kaleji is one of the many Mutton recipes dad used to make on a regular basis. His Sunday morning ritual of going to the local butcher shop, getting the best cuts of meat  and then spending the morning frying the masala till perfection is till fresh in my mind. Oil and spices were lavishly used and no compromises were made in terms of time or ingredients to make the rich curries.  Keema Kaleji is basically Mutton mince and livers cooked in a spicy Indian style curry. A masala of onion, tomato and spices is made and then mutton mince and livers are added to it. It can be enjoyed with either rice or any Indian bread. Spicy Sesame Peanut Noodles

All you need is Noodles - 150 g ( I used Chinese egg noodles ) Peanut butter - 1 tsp Sesame oil - 1 tsp Red chili paste - 2 tsp ( If red chili paste is not available, soak a few dry red chilies in warm water for sometime. Grind them in a grinder to make a paste ) Dark soy sauce - 1 tsp Vinegar - 1 tsp Sesame seeds - 2 tsp ( dry roasted till slightly browned ) Spring onion greens - 2 tbsp ( chopped ) Peanuts - 2 tbsp ( crushed ) Method of preparation Heat water in a large pot. When it comes to a boil, add 1 tsp salt and noodles and cook till noodles are done. Meanwhile, heat peanut butter and sesame oil in a wok. Add red chili paste. Cook for 30-40 seconds. Add soy sauce and vinegar. Drain the noodles and add them in the wok. Mix everything with 2 forks. Transfer in the serving bowl. Garnish with sesame seeds, crushed peanuts and spring onion green.

Tomato Salsa

Mexican food is not complete without variety of Salsas. Tomato salsa is the most common one and there are many ways to make this simple yet flavorful dish. I too have tried different versions in the past, but have settled for this recipe now. Blending the ingredient coarsely in a food processor make all the difference. You can also use your hand blender if you don't have a food processor. Here is the recipe. All you need is Tomato - 1 cup ( chopped ) Onion - 1\2 cup ( chopped ) Coriander - 2 tbsp ( chopped ) Garlic - 2 cloves ( chopped ) Jalapeno peppers - 1 ( chopped ) Olive oil - 1 tsp Salt to taste Black pepper - 1\4 tsp Lemon juice - 2 tbsp Method of preparation Mix tomato, onion, coriander, garlic and jalapeno peppers in the bowl of your food processor. Use the chopping blade and blend till the mixture is coarsely chopped. Add olive oil, salt, black pepper and lemon juice. Mix well. Chill for an hour before serving.

This spicy Garlic and red chili chutney is a traditional Rajasthani recipe. It's quick to make and take any Indian meal to a different level. Here is the recipe. All you need is Garlic cloves - 1 cup Ginger - 2 tsp Amchoor powder - 1 tsp Salt - 2 tsp Red chili powder - 3 tsp Method of preparation Grind all the ingredients in a blender to make a smooth paste.
