Chicken Kabsa Rice/ Arabian Chicken and Rice Recipe

C hicken Kabsa, is an Arabian style chicken and rice dish which can be prepared for any occasion. This dish is considered one of the national dishes of Jordan and Saudi Arabia. This is one method of cooking chicken along with rice the other method is after half cooking the chicken, remove the chicken pieces and grill them separately and at last place them on top of the prepared Kabsa rice.   This classic recipe is from Saudi Arabia. Chicken and rice are cooked in a beautiful spice mix making this one pot dish that can be prepared in a zing. As there are lots of Arabian restaurants in my home town Kerala, I got a chance of tasting this amazing dish during my stay a couple of weeks ago. I tasted this dish which I fell in love with the first mouthful. It's a dish that will be loved by all.  As the fasting is going on, one day my husband asked me to make this dish for Iftar. I searched for recipes and the combination of different websites which ended in a delicious mouth watering

Mackerel ceviche and rhubarb Recipe

Heat the oven to 180C (160C fan).  Trim 1 stem of rhubarb , cut diagonally in 1 cm wide pieces and put in a small baking dish with 20g sugar, 4 finely shaved strips of a lemon , 5 finely shaved strips of orange peel and a pinch of salt , toss gently, spread out and leave to macerate for 15 minutes. Meanwhile, pat dry 120g mackerel fillet (skinned and pin boned) and lay it on a plate. In a small bowl, mix  15g table salt and 5g sugar , sprinkle evenly over the flesh of the fish, then refrigerate, uncovered, for 25 minutes, to cure gently; don’t leave it any longer, or the fish will over-cure. Add 150ml water to the rhubarb, stir gently, then cover the dish tightly with foil and bake for 15 minutes,   until the rhubarb is just cooked through but still has a slight bite. Remove, uncover and leave to cool to room temperature.  Gently lift out the rhubarb pieces, leaving the liquid in the dish, then transfer to a large bowl. Skrei, sea lettuce, figs Recipe

Bring 1 liter water to the boil with 60g salt . Cool for at least 2 hrs.  Pre-heat the oven to 150°C Add a few lovage (lavas) leafs and 2 laurel leafs to the brine, before pickling 200g skrei (or cod) during 10 mins. Dry the fish and put in the oven till core temperature is 66°C. Asparagus Japanese style Recipe

Peel 4 asparagus spears and cut them in 4 cm pieces. Cover them with just enough water, bring to the boil. Boil for 2 mins, then turn of the heat and keep for seven minutes. Finely slice 2 shallots . Wok the shallots during 2 mins in 1 tsp  sesame oil with 1 tbsp grated ginger Add 1/2 tbsp mirin , 1 tbsp light soy sauce and 1/2 tbsp  oyster sauce. After 2 mins add the asparagus. Asparagus and potato salad Recipe

Boil 2 tbsp mustard seeds  during 20 mins. Rinse under cold water and put in a jam jar. Bring 150ml water to the boil with 50ml  vinegar and 100g caster sugar . Pour over the mustard seeds and cool. Boil 300g peeled  Nicola potatoes in water with some sprigs of thyme , 3 halved cloves of garlic and salt. In a separate pan boil 2 unpeeled  truffle potatoes. Peel 5  asparagus spears and boil them in 10 mins in unsalted water and 1 tbsp butter Break an  egg  in a mixing beaker with 1 tbsp  estragon vinegar  and 1/2 tbsp Dyon  mustard. Add 150 ml  grape seed oil. Start your stick blender at the bottom and slowly go up and up. After 10 seconds your homemade mayonaise will be ready. Season with  salt and pepper. Mix 50g mayo with 10g mustard, scrape the content from 1/2 vanilla pod  and add to the mayo. Cut the asparagus in 4 parts, mix with the Nicola potatoes and the vanilla mayo. Plate as shown, then add slices of truffle potato and small spoonfuls of mustard seeds

Scallop, samphire, clams, truffle potato and Reblonchon sauce Recipe

To use the last of my Reblonchon sauce (w arm 150g  chicken stock  with 50g cubed  Reblochon  cheese and a splash of  double cream . Use the stick blender to create a foamy sauce) I made this dish. With a panfried scallop , some samphire , a few steamed clams and a  deep-fried slice of  truffle potato . Pear and ginger on smoked salmon bites Recipe

Bring 20ml water to the boil, add 40g caster sugar , take from the heat and stir well. Cool. Peel a pear and a thumb of fresh ginger and cut in a very small brunoise, sprinkle with 1 tbsp l emon juice to avoid turning brown. Add 1 tsp sugar water to create a nice balance between sweet and sour.  Mix with 1 tbsp finely sliced chives Slice a thick fillet of smoked salmon into cubes, spoon over the pear&ginger mix and serve. Sole and white asparagus in miso butter Recipe

Combine 3g kombu and 300ml water and leave to infuse overnight The next day, start by making the miso butter. Melt 100g unsalted  butter in a large frying pan or sauté pan, then whisk in 50g white miso and set aside Blitz 200g fresh lovage (lavas)and 200ml grapeseed oil in a blender for 7-10 minutes until completely smooth, then simmer in a small pot for 5 minutes to evaporate any water. Pass through a muslin cloth to remove the solids Snap the ends off 4 white asparagus spears and peel from the tip downwards. Place in a pot with 300ml water, 300ml of the kombu dashi you made overnight and the juice of 1/2 lemon . Bring to a boil, then simmer gently for 9 minutes until the asparagus is tender. Lobstertail, broad beans, reblochon sauce Recipe

Defrost 2 boiled lobster tails. Remove the shell. Slowly bake the shell in 50g salted butter with 2 sprigs of lavas , 2 sprigs of tarragon and 3 cloves of garlic . Put trough a sieve after 30 mins. Warm 250g chicken stock with 50g cubed reblochon cheese and a splash of double cream . Use the stick blender to create a foamy sauce Softly warm the lobster meat in the butter. Mackerel, cucumber, apple, dill oil Recipe

Dissolve 60g salt completely in a liter of boiling water , cool for at leat 2 hrs. Then pickle 200g mackerel filets for 10 mins, wipe them dry Get the juice from 1/2 cucumber and 1 Granny Smith , mix 40g juice with 20g sour cream , 8g chardonnay vinegar , 7g sushi vinegar, 7g Kirin  and a pinch of salt Blitz 40g dill , 20g spinach and 150g grapeseed oil during 2 mins. Warm the dill oil in a 90°C oven during 2 hrs, sieve through a muslin cloth. Tuna on soy merengue Recipe

Pre-heat the oven to 85°C Whip 40g egg whites into peaks, then slowly add 50g caster sugar. Carefully add 12g soy sauce . Kerala Style Kozhi Pidi/ Rice Dumplings in Chicken Gravy Recipe

A s fasting is going on, watching the food related videos online makes us crave to try all the dishes. One such dish is this rice dumplings in chicken gravy. My daughter saw this on a food channel and asked me about this dish. As I grew up in Andhra, I ate mostly Andhra dishes and I just heard about this dish but never tasted it, so when she asked I thought of giving it a try and here I am today with the recipe in my blog. This is a very delicious and delightful dish which is popular in the northern region of Kerala. This dish has carbs and proteins all packed in one making it a one pot meal. Steamed Pidi This Kerala delicacy consists of steamed rice dumpling that is soaked in the chicken gravy which can be relished as a dinner or a snack which will be very filling. Some people will just cook the pidi (rice dumpling) separately in coconut milk gravy and will have it along chicken curry, here I mixed both which formed as a delicious, thick dumpling gravy. Asparagus on ham, sauce Hollandaise Recipe

Ask the butcher to slice the ham 3 mm thick Peel 2 asparagus, remove the last 4 cm. Cover with just enough salted water, bring to the boil, boil for 2 mins, then turn off the heat and leave for 9 mins. In the meantime make the Hollandaise: Step 1: melt  125g  butter  in a  saucepan  and skim any white solids from the surface. Or use store-bought clarified butter. Keep the butter warm .   Step 2: put 3  egg yolks , 1 ½ tbsp  white wine,  1 tbsp  tarragon vinegar , a pinch of  salt  and  in a metal or glass bowl that will fit over a small pan with barely simmering hot water. Whisk for a few mins,  whisk continuously until pale and thick, about 3-5 mins. Step 3: kill  the heat and slowly whisk in the  melted butter,  bit by bit until it’s all incorporated and you have a creamy hollandaise.  (If it gets too thick, add a splash of warm water. ) Step 4: season with a squeeze of  lemon juice  and a little  cayenne pepper.  Keep warm until needed. Pre-heat the oven at 160°C Mix 200 ml  orange juice with 80 ml chicken stock and a pinch of   saffron and reduce to 50% Then add 30g salted butter and mix with the stick blender, Finely slice 1/2 fennel bulb Use the kitchen burner to blacken 4 fillets of mullet , then bake them during  mins in the hot oven. Stir fry 50g  sea aster in butter. Start plating with the sauce, with the sea aster on top of the fish. Plaice, blueberries, Riesling sauce Recipe

Boil 60g salt in 1 l water , till the salt has completely dissolved. Then cool for at least 2 hrs. Pickle 4 fillets of plaice during 10 mins. Take out, rinse and dry. Finely slice an onion and sweat in 1 tbsp butter with some tops of thyme sprigs , deglaze with 2500 ml Riesling and reduce till 1/3 is left. Add 80 ml fish stock and 80 ml  double cream and simmer another 10 mins. Whisk 40g butter in the sauce and season with salt, pepper, and the zest of a  lemon . Make a cocktail sauce from 1 tbsp mayo , 1 tsp ketchup , 1 tsp ginger syrup , 1 tsp whisky and a few drops of Worcester sauce . Smoked mackerel, marrow, horseradish on sourdough toast Recipe

Preheat the oven at 180°C Mix 100g smoked mackerel with 20g sour cream , 1 tbsp sambal and a pinch of salt Bake a marrowbone in the oven during 20 mins, then use a spoon to get the marrow out Brush some olive oil on 2 slices of sourdough bread , season with sea salt and pepper and toast 10 mins in the hot oven Spoon the fish over the toast, then the marrow, followed by 1/2 tsp grated horseradish and some cress.
