Whole Wheat Pasta with Roasted Pepper and Chicken Sausage

Image
O ne of the best things to have a food blog is that I get a chance to try different varieties of dishes so that I can feed my blog. This is one of the recipes which I was thinking to make for so long, as I was not sure about broiling. One day I tried and this is the result. Broiled Bell Pepper Pasta is one of the most preferred dinners on any day in my house. My kids, even the small one, love the pasta made in any sauce. They love Mac and Cheese a lot. So I make sure that they get all the healthy nutrients by adding lots of veggies. By adding different varieties of cheese and herbs, we can make the pasta more delicious and flavorful. In this recipe, I broiled the bell peppers till it becomes soft and the skin came out easily. We can also roast these bell peppers on the stove top. These freshly roasted peppers will give the pasta a nice smoky taste. I have mixed both penne and fusilli pasta. We can also add cooked chicken pieces instead of sausage. As my kids love to eat the small ro...

Homemade Mac and Cheese

Image
O nce in a while we can have a bowl of warm, cheesy, creamy, goodness. My daughter is a big fan of mac and cheese. Whenever we go out to restaurants, she will have her favorite pasta. I thought if she loves it a lot, then why not try make it at home and here it is. A simple but a creamy rich dish. You can vary the pasta, by adding boiled veggies, corn, prawns, chicken or anything of your choice. But I made it plain as this is the classical mac and cheese recipe. The addition of ground mustard will give an additional kick to the dish. Kids will love this amazing cheesy flavorful pasta. Whatever the occasion is, this mac n cheese will always spell comfort. Leftovers can be kept in the refrigerator and can be had anytime by reheating in the oven. If you feel the mac n cheese is dry just add some more milk and heat it on stove top. If you have an extra time, just bake the mac n cheese in a preheated oven by covering it with a lid or a foil in a casserole dish at 350 degrees F for about 20 m...

Crunchy papardelle.

Image
Only 12 ingredients, but yes, Ottolenghi again from the Guardian and it was delicious! 250g tender stem or sprouting broccoli, 250g button mushrooms, halved 50ml olive oil,  100ml white wine,  1 bay leaf,  3 thyme sprigs, chopped ½ tsp sugar,  150ml double cream,  Grated zest of 1 lemon, 1 garlic clove, crushed 3 tbsp chopped parsley,  20g Panko* breadcrumbs, or another,  250g pappardelle Clear any leaves from the broccoli and cut into 4cm-long pieces (stalks and florets). If the stalks are thick, cut along the centre. Blanch in boiling salted water for two minutes and drain. In a large saucepan, sauté the mushrooms in the hot oil until they start taking on colour. Add the wine, bayleaf, thyme and sugar, reduce to a third, then add the cream. Season to taste and keep warm. Mix together the lemon zest, garlic and parsley. In a hot pan, toast the breadcrumbs until golden, stirring occasionally. Cook the pappardelle in salted water. When just ready, ...

'Homemade' lasagna (2 portions for now and 14 for the freezer))

Image
With 'homemade' we mean that this is not store-bought lasagna (that has lots of carrots and is quite sweet). Yes, we did go to the store and bought 3 red paprikas,  140 gr grated Comté cheese,  a 125 gr package of mixed grated Italian cheeses (Provolone piccante, Mozzarella, Pecorino and Formaggio Stagionato),  2 (400gr) pots of Barilla Bolognaise sauce,  2 packets of chilled ready made Béchamel sauce (66 cl in total) and  2 packets of 'fresh' (i.e not the dried variety) lasagna sheets and  a 400 gr tin of peeled tomatoes.  On our way back we stopped at the market where an English butcher sells excellent chili hamburgers . They release hardly any fat and we used 6 of them instead of minced meat (750 gr ). Back home we halved the paprikas, removed the stems and seeds and grilled them under the grill till blackened. We pre-heated the oven at 200C and started slicing 4 onions , that were softened on a low heat. Then we added the contents of the 2 pots of...

Pasta, mushrooms, Serano

Image
The fun started already early in the morning, at the weekly market. We met the guy who picks mushrooms in the woods. If there are any. Nicely presented on dried ferns. First one had to be patient while he is advising other customers. No problem as in the meantime you can study what's on offer and think about possible recipes. Ceps with a runny omelet? Or papardelle with a creamy sauce with crisp Spanish ham. Or... Before you know it its your turn and others have to wait as the lesson starts all over. The name in Latin. Where he found them. How to clean them. The best way for preparation. A couple of recipes.Ending with the transaction. Always way to cheap in my eyes compared to the commercial mushrooms in the supermarket. Anyway, start with bringing 2 liter water to the boil for the pasta. Slice 2 garlic cloves finely. Slice the mushrooms. Put 25 gr butter in a frying pan. When the butter starts foaming chuck in the garlic and mushrooms till nicely bro...
