Malai kofta... Soft dumplings made with panner in a rich and creamy gravy makes a stunning vegetarian main course option. There are any ways in which you can make this dish. Some people prefers it in a white cashew nut based gravy and other swears by the onion and tomato version. I too make this dish in a variety of ways and each one is special to me. But for today, I am sharing you the one with only tomatoes and cashew nuts and I am sure you will love it. Here is how to make Malai Kofta. Veg Tikka Masala \ Marinated and Grilled Vegetables in a Spicy Gravy

A couple of days back, we enjoyed a lovely evening with friends, good food and drinks at my place. I was in charge of food and we decided to use our newly acquired gas grill and a barbeque was set up. With a lot of  food and drinks around, I ended up with a big batch of grilled vegetables as left overs. Now to use up all those vegetables was a challenge and that's when this Veg Tikka Masala came to my mind. The gravy is the same that I make for my Chicken Tikka masala and the beautiful smoky flavor from the grilled vegetables made it even more amazing. Although I used the left over vegetables to make this curry, you can specially marinate the veggies, grill them on a gas grill or a grill pan and then add them in the curry. Although Dum Aloo is a traditional Kashmiri dish, a lot of variations have come up in this recipe. A few days back, I shared the recipe to make Dum Aloo in Authentic Kashmiri style, which is very different from what we get to eat in restaurants in the name of Dum Aloo. The gravy that we get in the restaurants is much rich and creamy and although it's not the traditional way of making the dish, tastes really good. Use of fresh cream and cashew nut paste in a onion based gravy makes this dish really special and it goes very well with Indian breads. Masaledar Bharwan Baigan

Masaledar bharwan baigan is a simple dish made by stuffing brinjal with a masala. It could be a dry masala with only spices or it could be a onion based masala. I prefer the onion based masala as it gives the brinjal a very lovely flavor. Finely chopped onions are cooked with ginger garlic paste and the dry masalas are added to it. This filling is then stuffed inside the slit brinjals. Here is the recipe. Karahi or kadai paneer is a very famous Indian Cottage cheese recipe and is one of the most common dishes ordered in a restaurant. I too love the dish and used to make it a lot in my kitchen but there use to be something missing in my home made version.I realised that it is the smoky flavor which is there in the restaurant style kadai paneer that is lacking in my home made recipe. So this time, I smoked my kadai paneer with some flavorful smoke and the result was superb. Badami Murg Korma \ Chicken in Almond Gravy

Korma or qorma is a dish made with yogurt and a paste of nuts and seeds. I made a badami chicken korma today with almond paste and yogurt and it's turned out very delicious. The recipe is very simple to make and unlike other chicken recipes, very less onion is used to make this. Take care while frying the onions to golden brown. They should not be over fried otherwise the gravy will have a bitter taste. Keep in mind that they keep to brown a little more even after taking out from the oil. Spinach is a good source of iron, vitamins and calcium and I try to incorporate it a lot in my diet. This chickpea in a spinach curry is a delicious way to incorporate the green in your meal. The spinach is blanched and pureed and is blend with a onion and tomato gravy. You can also add paneer, corn or even meat to this gravy. Here is the recipe. Dhuwan dahi gosht is a mutton preparation where mutton is cooked in a spicy onion and yogurt based gravy and is then infused with the smoke released from a burning piece of charcoal. The charcoal is drizzled with kewra essence and ghee, which releases a very fragrant smoke. The subtle flavor of this smoke gives the gravy a very distinct flavor. Here is the recipe. Murg Khada masala is a signature dish of my Dad. Everyone in my family loves to cook and my Dad is no exception. Both my parents being doctors had a very tough and busy life and cooking a hearty and delicious meal for the family was their stress buster. So on a few of the weekends, my dad would take over the kitchen and whip up a delicious meal which mostly used to be Non vegetarian curries or his signature aloo matar ki sabzi. Having lived in Northern part of Indian since my childhood, we never got to taste sea food. Prawns and other sea fishes were not available and so we never developed a taste for them. But once on my husband's insistence, I tasted prawns and just loved them. Since then they have become one of my favorite food and I make sure I make some for special occasions. So when I was planning a special Valentine's day meal for my hubby, Prawns were obviously in the list. I decided to make them in a coconut milk gravy this time and they turned out wonderful.
