Laccha Paratha \ Multi Layered Indian Flat Bread

Laccha paratha...These flaky, multi layered flat bread is one of my favorite Indian bread to go along with the rich and creamy curries that are served in the restaurants or are made for special occasions at home. Although these parathas are easily available these days at the local superstores, making them at home just makes sure we are using good quality ingredients and no preservatives. I tried making them at home a few days back and the result was very encouraging. Although these uses a lot of oil and refined flour, but then you don't have these everyday. So here is how to make laccha Paratha at home. All you need is All purpose flour \ Maida - 3 cups Sugar - 1 tbsp Salt - 1 tsp Oil - 1 tbsp and more for applying and frying Laccha Paratha Recipe Mix flour, sugar, salt and 1 tbsp oil in a bowl. Makki aur Mooli ka Paratha

Makke aur mooli ka paratha is a traditional Punjabi dish made especially during winters. It is traditionally made in the wood fire, but now we have started making it on the stove top. It tastes best when it is hot and smeared with a layer of ghee on top and a piece of gur ( jaggery ) on the side. Here is the recipe. All you need is Maake ka atta \ Maize flour - 2 cups Mooli \ radish - 2 cups ( grated ) Ginger - 1 tsp ( grated ) Methi - 1\2 cup ( chopped ) green chili - 1 ( chopped ) Salt - 1 tsp Oil for frying Ghee for applying on top Method of preparation Mix all the ingredients in a bowl. Add little warm water and make a soft dough. ( This dough is different from the regular wheat flour dough. It does not makes a smooth dough ) Keep aside for 10-15 minutes. Divide the dough into 8 equal parts and shape them into balls. Grease two plastic sheets with oil. Keep the dough ball in between the sheets and roll into 5-6 inch disc. Heat a griddle. Aloo Matar ka Paratha

Tired of making plain aloo ke parathe. Add little peas in the filling and enjoy the change. Here is the recipe. All you need is Whole wheat flour - 1 cup Salt - 1\2 tsp Oil - 1 tsp Potato - 1\2 cup ( Boiled, peeled and grated ) Peas - 1\2 cup ( boiled ) Garam masala - 1\2 tsp Green chili - 1 ( chopped ) Green coriander - 2 tbsp ( chopped ) Oil for frying Method of preparation Add whole wheat flour, salt and oil in a bowl. Mix. Add water and knead to make a soft dough. Cover and keep aside for 15-20 minutes. Mix boiled potato, peas, salt, garam masala, green chili and coriander in a bowl. Mix nicely. Make lemon size balls of the dough. Divide each ball into two pieces. Dust and roll both the pieces to approx 4-5 inch. Keep 2 tbsp of filling on one of the rolled piece. Cover with the another rolled piece. Seal the ends. Dust and roll to approx 6 inch disc. Heat a griddle. Fry the paratha from both the sides applying little oil till brown spots appear.
