Keema Kaleji \ Mutton Mince and Liver in a Spicy Curry

Keema kaleji is one of the many Mutton recipes dad used to make on a regular basis. His Sunday morning ritual of going to the local butcher shop, getting the best cuts of meat  and then spending the morning frying the masala till perfection is till fresh in my mind. Oil and spices were lavishly used and no compromises were made in terms of time or ingredients to make the rich curries.  Keema Kaleji is basically Mutton mince and livers cooked in a spicy Indian style curry. A masala of onion, tomato and spices is made and then mutton mince and livers are added to it. It can be enjoyed with either rice or any Indian bread. Muttabal \ Middle Eastern Eggplant Dip

Muttabal.. is a Middle eastern Dip made with eggplant. The eggplant is cooked on fire to give it a smoky flavor and it is then blended with other ingredients and spices to make Muttabal. Enjoy this delicious dip with Pita bread, crackers or as a sandwich spread. Here is how to make Muttabal All you need is Eggplant - 1 Onion - 1\4 cup ( finely chopped ) Tomato - 1\4 cup ( finely chopped ) Tahini - 2 tbsp Lemon juice - 2 tbsp Garlic - 6-8 Hung curd - 2 tbsp Salt to taste Olive oil - 2 tbsp Chili flakes - 1 tsp Fresh coriander - 1 tsp ( chopped ) Recipe of Muttabal Wash the eggplant and pat dry. Make a few incisions on the eggplant and roast directly on a gas stove or in an oven till the skin turns black and the flesh is softened. Remove the blackened skin of the eggplant. Add the flesh and remaining ingredients in a blender and just blend once or twice to make a coarse dip. Serve with pita or any other crackers.

Vegetable Jalfrezy....This medley of vegetables in a spicy masala is a delicious option for an Indian meal. I was cleaning my refrigerator yesterday and that's when I found half a capsicum, a few florets of cauliflower and a single carrot lying in the vegetable basket. These vegetables makes for a delicious mix vegetable curry and so without much brain storming, my dinner plan was ready. Frozen peas from the freezer and a packet of paneer added to this array of colorful veggies made into a lip smacking Vegetable Jalfrezi in no time. You all are well aware of my love for the stone fruits and how I am desperately trying to make the most of them while they last. With the summers comes the stone fruits and I get obsessed with cooking and baking with them. This obsession is not irrational as you just get a few days to enjoy these and then have to wait for an entire year for them to come back. So please bear with the upcoming recipes which will be featuring a lot of stone fruits :) Made this not so common combination a few days back and it was loved by all in the family. The sweet and tangy plums gives a characteristic flavor to the gravy which goes very well with the spicy mutton. This recipe need both dried plums and fresh plums but if fresh plums are not available, you can add a few teaspoons of lemon juice.The thing that you should always keep in mind while cooking with plums is to add them at the end of cooking. You think of Indian snacks and the first thing that pops up is Samosa. Samosas have made a big name for themselves and for Indian snacks in the foreign world. During our days of travel, lot of Mohit's colleagues requested me to make samosas for them and it was always a joyous sight to see them devour the humble samosa with much Oohhs and aahhs. It's been really long since I made some Indian sweet. With the festive season coming close, it's the right time to indulge in some sugary treats and so I bring you this easy to make yet very delicious Nariyal Ki Barfi. Nariyal ki barfi or coconut fudge is a must make sweet for the weddings in Mathur community and is called Pili barfi for it's yellow color. The sweet which is decked with silver foil, saffron strands and dry fruit slivers is arranged on a big thaal or plate and is send to the grooms family along with the other goodies as a token to mark the beginning of the celebration. A couple of days back, we enjoyed a lovely evening with friends, good food and drinks at my place. I was in charge of food and we decided to use our newly acquired gas grill and a barbeque was set up. With a lot of  food and drinks around, I ended up with a big batch of grilled vegetables as left overs. Now to use up all those vegetables was a challenge and that's when this Veg Tikka Masala came to my mind. The gravy is the same that I make for my Chicken Tikka masala and the beautiful smoky flavor from the grilled vegetables made it even more amazing. This Chicken Dahi Wala recipe is very close to my heart as it's my Dad's to go recipe and I remember him making this dish week after week on our demand as we never got over this flavorful, spicy curry with a lovely texture. The recipe is quite easy to make as all you have to do is to brown the onions. All the other ingredients are basically dumped in the pan and cooked till they blend beautifully with each other.
