Coffee Cookies- Coffeelicious..

Mmmmmm..... I simply love the smell of freshly baked goodies, just as I love baking since the aroma of the baked items will linger around and also the taste of the freshly baked goodies is something exceptional which we cannot get anywhere in the market.


Most preferably I like to bake cookies as the buttery taste and the “melt-in-mouth” cookies are very simple and easy to make without much effort and they taste heavenly. And that too if the cookies are made of coffee then nothing can beat those. On a very tiring day, these are a special energy boosters that we all love to have it with a cup of hot tea. But we should take care that the coffee shouldn’t exceed the limit as it will taste bitter.



It happened to me, when I baked the first batch I added exact amount of coffee powder the recipe was demanding and it turned out to be bitter and then for the second batch as I reduced the amount of coffee, it was amazingly delicious.

This is a really tasty treat in which instant coffee, flour, butter, sugar are used and these cookies are sprinkled with sugar or designed with fork to make it look more attractive. So here is the yummy treat which you all should just try out... :-)




Ingredients:
Adapted from treat and trick:

  1. Maida / All purpose flour- 1 cup
  2. Baking powder- 1 tbsp
  3. Sugar- ¼ cup
  4. Butter- 6 tbsps
  5. Coffee- ½ tbsp
  6. Hot Water- 1 tbsp
Method:
  1. Mix coffee with hot water in a bowl and keep it aside.
  2. Mix powdered sugar with butter using hand mixie or using a spoon. Add this to the maida and baking powder mixture and mix well.
  3. Add coffee mixture to the above maida and mix till it forms a dough.
  4. Preheat the oven to 190 degrees C. Meanwhile make small balls out of the dough and press it on your palm and bake it for about 20 minutes.
  5. Crispy, crunchy, soft and smooth cookies are ready.
  6. If you want you can press some sugar crystals or press fork on top of the cookie dough.
