For Mocha Frosting:
• ½ + ¾ cup softened or unsalted butter
• 3 ¾ cup icing sugar
• 2 tablespoon instant coffee
• 3 tablespoon dark cocoa powder

How to Prepare Coffee Cake with Mocha Frosting:
For the Cake:
- Preheat oven to 350˚ or 170˚C.
- Grease and flour one or two big round baking pans.
- Mix sugar, flour, ¼ teaspoon salt and baking soda in a large bowl. Set aside.
- Heat butter in a pot on medium-high speed.
- In the meantime, while it’s melting, add 3 tablespoons instant coffee to 1 cup boiling water. Again set aside.
- Once the butter has melted, add coffee mixture into the same butter pot. Let it boil for some 10-15 seconds and then turn off the heat and set aside for just a minute.
- Add buttermilk, vanilla extract and eggs in a separate bowl. Mix it well.
- Pour flour mixture into the butter/coffee mixture. Stir it gently. Then cool down the heat before adding the egg mixture.
- Mix in the egg mixture and stir it gently until well mixed. Then pour the whole mixture into the pans. Bake for 20-25 minutes (for big pan heat it to 30-35 minutes).
- Allow it to cool completely.
For Mocha Frosting:
• Mix all icing ingredients and then ice the Cake. Freeze it for an hour before serving.
