Caramelised cabbage, beet and feta Recipe


Pre-heat the oven at 220°C

Put 2 slices of  white cabbage (2,5 cm thick) on a baking tray. Brush with 2 tbsp olive oil and season with salt&pepper. Cover with alu foil and put in the oven.

Remove the foil after 20 mins and bake for another 25 mins, or till the cabbage is nicely browned and caramelised.

In the meantime mix 140 g cooked beetroots (peeled and in slices) with 30 ml balsamic vinegar, 30 ml olive oil, 1/2 tbsp brown sugar and 1/4 tsp sea salt.

Serve the cabbage with the beets, 100g crumbled feta, 6g dill tops, 6g parsley leaves and the marinade from the beetroots.
