Warm salad of lentils, smoked salmon, lemon yoghurt Recipe
Slice 1 red onion in rings and sweat for 3 mins in a tbsp oil. Add 70g finely cut kale (or boerenkool).
Sweat for another 3 mins till the cabbage starts to shrink. Add 200g lentils from a can ad warm them (mine were red)
Then stir with 1/2 tsp red wine vinegar. Season with salt and pepper
Grate a lemon and mix 1/2 tsp with 140g Greek yoghurt
Serve the warm salad with 100g smoked salmon pp on top and the yoghurt (and maybe some lemon as well) on the side.
