Coconut curry whiting Recipe


Heat a medium saucepan over medium-high. Drizzle in  1tbsp
olive oil and swirl to coat bottom of pan. Add  1 sliced red and 1 green pepper and 1/2 sliced onion and saute until softened, about 3 minutes. Season with salt and pepper.

Sprinkle the vegetables with 3/4 tbsp curry powder, and saute until fragrant, 2 minutes. Add 1 minced clove of garlic and 1/2 tbsp grated ginger and cook, stirring, until fragrant, about 30 seconds.

Place 300g pieces of skinless whiting on top of cooked vegetables, pour 200 ml coconut milk over top, reduce heat to medium-low, and simmer until fish is cooked and starts to flake, about 20 minutes. Adjust salt and pepper, if necessary. 

Drizzle with lime juice, and serve garnished with spring onion  and coriander leaves
