Make a cocktail sauce from 2 tbsp mayo , 1 tbsp ketchup , a few drops of whisky , a bit of cayenne pepper and 1 tsp worcester sauce . Mix 80g brown shrimps with 1 tbsp cocktail sauce. Do the same with 100g crab meat. Taste and add some lime juice . Use 4 cm service rings and start at the bottom with cold  omelet , followed by smoked salmon , then a slice of  apple, then the  crabmeat . Then do it all again: with omelet, smoked salmon, apple and finally the shrimps . Finish with frisée and crispy croutons . Add a tbsp yogurt to the rest of the cocktail sauce and spoon it around this tower of luxury. Crab and Gruyere quiche, mango mayo Recipe

Pre heat the oven to 175°C and brush a 23 cm quiche tin with olive oil. Slice 2  shallots in thin rings and sweat them in olive oil   for a few minutes. Whisk 350 ml milk with 100g flour, then (one at the time) add 3 eggs and keep whisking to make a batter. Season with pepper and salt and with 1 tbsp hacked parsley. Finally fold 200g crab meat, 100g grated Gruyere and the shallots trough the batter and pour into the tin. Bake in the oven for 40 mins. Stained Glass Cookies- Holiday treats Recipe

T hese sugar cookies are buttery, crisp with a candy center. This tastes as good as it looks. A perfect holiday classic. This is the first time I am trying to make these cookies. Actually my daughter made these from scratch for her youtube channel as Christmas cookies. She decorated the cookies using royal icing and the second time, I thought of giving it a try by making them as stained glass using Jolly Ranchers. This was a hit among family and friends. You cut a shape from the cookie dough, transfer it on the baking sheet and cut a smaller shape and fill it up with crushed jolly ranchers. Bake them and when the sides turn light brown in color, take it out of the oven and an evenly baked striking cookies are ready to be served. This is a perfect treat to make and gift to your friends. Cider-cured Iberico chops, caramelised onions and apples and a Bordelaise sauce Recipe

Start a day in advance with making the brine: dissolve 3 tbsp salt in 700 cl of warm water in a large bowl. Add 1/2 tbsp freshly ground black pepper , pour 300 cl apple cider and mix. Drop 2 Iberico pork chops into the brine and add enough additional apple cider so that the chops lurk in the liquid like frogs in a pond. Cover and refrigerate for at least 8 hours and up to 72. For the  caramelised apples and onion heat 1 tbsp olive oil over medium high heat and add 2 peeled, cored and wedged  apples, 1 sprig of thyme and a  bay leaf . Cook, stirring occasionally, until the apple wedges are golden brown but not mushy, 5-10 mins. Remove from the heat and discard the herbs. Add 1 tbsp olive oil add 1 tbsp butter and 3  large white onions, peeled and sliced. Then 1 sprig of thyme and another bay leaf . Season with salt and pepper. OK, this does not look spectacular but it is ideal for a dinner party because you stick in in a 200°C oven the moment you serve the starters and it will be ready to serve 20 mins later. Peel and slice 300g carrots (orange, yellow and purple). Peel 1 parsnip and cut into small cubes. Cook them for 4-5 mins (the purple carrot separately) Season 2 filets of brill and pan fry for 2 mins per side. Remove from the pan and cut in small pieces. Put a clove of garlic in the press and fry with the cooked veggies for about 2 mins. Melt 25g butter in another pan on a low heat and add 25 g flour. Cook well for 2-3 mins, the slowly slowly add 250 ml milk and keep stirring. Add 1 heaped tsp Dyon  mustard. Taste and season with pepper and salt, then add the vegetables and the pieces of fish. Divide the ragout over 4 individual ovenproof dishes and add a tbsp of finely cut herbs (dill, parsley, chives) Cover with puffed pastry and brush with a beaten egg . (Recipe Nederlands Visbureau)

Omelet nasi goreng Recipe

Slice a red chili and 2 spring onions . Fry in 1 tbsp oil with 1 tbsp grated ginger, for 1 minute.  Add 100 g minced chicken and fry for 3 mins, then add 140g boiled rice and 1 tbsp soy sauce . Cook another minute. Whisk 4 eggs with 60 ml milk and add to the pan. Move the pan to spread the egg mix evenly and cook for 5-6 mins.  Serve 2 quarters pp, with extra spring onion , Thai basil , sambal ,  chili sauce and ketjap manis . Chorizo and cauliflower bolognese Recipe

Remove the skin from 150g fresh chorizo sausages , pan fry during 5 mins the meat with a hacked clove of garlic and 1 tbsp oregano leaves in 1 tbsp olive oil. Take out and reserve, use the chorizo fat to fry 300g finely hacked cauliflower , seasoned with black pepper, during 8 mins. Add the chorizo and 1/2 tin (of 400g) diced tomatoes and 50 ml  beef stock and simmer for another 5 mins. In the meantime warm 300g courgette 'spaghetti' . Crispy noodle omelet Recipe

Cover 75g rice noodles  with boiling water   and leave for 5 mins. Then drain and reserve. Mix 1 tbsp grated ginger with 1 tbsp grape seed oil and 1 pressed clove of garlic and fry for 1 min then add the noodles and 3 lengthwise sliced bimi's and wok for another 5 mins. Harissa and honey glazed salmon on roasted leek Recipe

Pre-heat the oven at 220°C Cut a  leek  lengthwise and then in 7 cm segments. Brush with olive oil and season with salt and pepper Put in the oven for 20 mins In the meantime mix  rose harissa  with runny  honey  (50/50) and brush on  salmon  filet(s).  After 20 mins raise the oven temp to 240° and add the salmon for 10 mins.  Serve as an amuse bouche. Sesame-nori crusted Haddock on a Japanese cabbage salad Recipe

Whisk 1 tbsp rice vinegar, 1 tbsp water and 1/2 tbsp soy sauce in  35g light  tahin  t o make a smooth dressing. Reserve. For the Japanese salad mix 200g sliced red cabbage , 200g sliced white cabbage, 5g coriander leaves and the rings of 1 spring onion. Use scissors to cut 2 sheets of nori into thin strips. Mix the nori with 20g sesame seeds and 1/2 tsp sea salt.   Push 2  fillets of Haddock, ca 150 g each, in the nori mix till covered on all sides. Caramelised cabbage, beet and feta Recipe

Pre-heat the oven at 220°C Put 2 slices of   white cabbage (2,5 cm thick) on a baking tray. Brush with 2 tbsp olive oil and season with salt&pepper. Cover with alu foil and put in the oven. Remove the foil after 20 mins and bake for another 25 mins, or till the cabbage is nicely browned and caramelised. In the meantime mix 140 g cooked  beetroots (peeled and in slices) with 30 ml balsamic vinegar , 30 ml olive oil, 1/2 tbsp brown sugar and 1/4 tsp sea salt. Serve the cabbage with the beets, 100g crumbled feta, 6g dill tops, 6g parsley leaves and the marinade from the beetroots. Glazed miso chicken on sesame pumpkin Recipe

Pre-heat the oven at 220°C Peel 1/2  butternut squash and cut into  1 cm thick slices. Mix 2 tbsp olive oil, 2 tbsp   sesame seeds and some sea salt in a bowl, then add the pumpkin slices and stir to cover well with the mix Transfer to a paper covered baking tray and put in the oven for 20 mins. Whisk 90g white miso with 1 tbsp sesame oil , 1 tbsp soy sauce , 60 ml mirin , 2 heaped tbsp l ichtbrown sugar and 1 tbsp rice vinegar in a bowl. Add 4 chicken thigh filets and stir well. When the pumpkin has been in the oven for 20 mins, add the chicken and pour the rest of the miso marinade over it. Warm salad of lentils, smoked salmon, lemon yoghurt Recipe

Slice 1 red onion in rings and sweat for 3 mins in a tbsp oil. Add 70g finely cut kale (or boerenkool). Sweat for another 3 mins till the cabbage starts to shrink. Add 200g lentils from a can ad warm them (mine were red) Then stir with  1/2 tsp red wine vinegar. S eason with  salt and pepper Grate a lemon and mix 1/2 tsp with 140g Greek yoghurt Serve the warm salad with 100g smoked salmon pp  on top and the yoghurt (and maybe  some lemon as well) on the side.
